Clare, the founder and chief baker at Fudge & James, shares how an autoimmune diagnosis motivated her to create a premium range of gluten free cookies and biscuits that didn't compromise on flavour or texture. She's now on a mission to make delicious gluten free baking that is safe and irresistible for everyone.
TGFC/ How did you get started?
Clare/ I started Fudge & James while I was on maternity leave after having my oldest child (now 4). Originally, I was baking biscotti in my home kitchen and selling it at farmers markets. A few weeks after I started selling, I was diagnosed with coeliac disease and realised I would no longer be able to bake with wheat flour in my kitchen without risking my health.
At this point, I decided to create a range of premium gluten free cookies and biscotti that didn't compromise on flavour or texture. After a lot of hard work, I'm thrilled with what we've created and many of our customers aren't even gluten free, they just love our products.
TGFC/ What makes Fudge & James special?
Clare/ Most of the gluten free biscuits I tried when I was first diagnosed had a disappointing flavour or texture compared to regular wheat products. So, I took on the huge challenge of learning how to bake without gluten. We set out to make a premium delicious range with the texture and flavour of a regular biscuit. We use high quality ingredients, and every biscuit is handmade and packed with love.
Our packaging is home compostable. You can pop it into your home compost and they will break down within a few weeks.

TGFC/ It sounds like you take a lot of effort to ensure your products are safe for people who can't eat gluten?
Clare/ When you buy from us, you know you are getting a quality baked product that has been hand crafted in a gluten free kitchen using carefully sourced gluten free ingredients.
It is so important to us that our customers have confidence that our products are safe for those with gluten intolerance or coeliac disease, but I also wanted them to taste absolutely delicious for everyone.
I was adamant there should be no compromise on flavour or texture with our gluten free products. I didn’t want gluten free goods that were ‘nice for gluten free” or “OK but not as good as the real thing”.
